This whisky is a truly unique style that harks back to the earliest whiskies ever produced. In those days, there was no filtration of the wash beyond allowing large sediments to settle at the bottom, leaving suspended smaller particles, leftover starch, and other molecules to be distilled. Additionally, the only heating technology available at the time was direct-flame-powered distillation, which contributed to distinct flavors. Imagine baking a cake directly on charcoal where the bottom caramelizes and smokes slightly resulting in beautiful smoky caramel notes like no other. 

Please note: This is not a peated whisky! The gentle and relatively short-lived smokiness comes from a completely different chemical reaction.

The main chemical reaction at play is the Maillard Reaction, which occurs between amino acids and sugars. This is the same reaction responsible for the rich flavors we love in roasted coffee, baked bread, and grilled meat.

Color: Beautiful ruby.

Nose: Incredible sweetness and caramel notes, the best porridge aroma I’ve ever encountered. The elegance of the French oak elevates it even further—this is a nose like no other!

Palate: Full-bodied whisky (don’t let the ABV fool you!) It's chewy, sweet, and smoky, with deep notes of reduced figs. The use of unmalted grains contributes beautifully to the flavor, revealing a side of rye whisky we’ve never come across before. The sweetness and super-light smoky notes linger for a long satisfying finish.
