Wholly Shit - Natural Cask Strength 60.5% - Single Cask - 2nd Fill Bourbon
This Single Cask release is a celebration of the 2nd Fill style of whisky. This style of Whisky focuses on the grain’s characteristics, the Still’s impact on the Whisky, and without a doubt sheds the light on the Belgrove’s Terroir.
One aspect of our terroir is the veye distinctive note of spearmint which is the result of the gumtrees around our farm; those tree during the hot weather during the same time when the grains are growing, eucalyptus oil is released which eventually condenses on our grains at night during the colder temperatures. This oil carries through due to the use of 80% Unmalted & Whole Rye Grains.
The 20% malted rye grain of this 100% Rye Whisky was smoked by burning dried sheep dung.
Belgrove sheep eat the spent grains from the distillery, their dung fertilizes the farm and some of their dung is burnt. Ultimate recycling.
