This Rye Whisky is in a league of its own!

We haven’t done this style before in such a large 300L barrel. Usually, whisky barrels are almost fully filled with spirit, which helps create pressure that pushes the spirit into the wood to extract the flavors. This 300L barrel was only filled with 100L of spirit. Two-thirds of the barrel acted as a vat (decanter).

This whisky was aging and vatting at the same time! Due to the large gap inside the barrel, the flavors were extracted in a different process than the usual "pressure build-up"—instead, they were drawn through osmosis!

100% Rye, Single Cask, Natural Cask Strength.

As stout is mostly water by volume, it’s not meant to leave any flavor or color. We sent the barrel for stout aging to clean it of previous flavors.

This whisky is about The Land (terroir), The Grain, The Still, and very little oak impact.

Very limited numbers are available—no more than 70 bottles were bottled.

Color: Straw-yellow, celebrating the third-fill style, which is very difficult to get colour out of.

Nose: Exceptionally rye, mixed with caraway seeds, magnolia, and lemongrass; sweet and elegant, finishing with porridge notes.

Palate: Sweet, spicy, spreads all over the palate, slightly oily, with a Millard reaction (taste of the still), and a very long-lasting finish.
