This very rare and super-limited release, created in collaboration with Wine TAS, sheds light on the beauty of traditional Grappa. Made with fermented Tasmanian grape pomace (skins, seeds, and stems), it was distilled using our direct-flame-powered copper still. Direct-flame distillation is the original method of all distillation, fundamentally enhancing the spirit’s underlying chemistry.

We then took it to another level by aging the clear Grappa in a 200L 1st-fill Tasmanian Pinot Noir French oak cask for 10 years! This expression sits in the top 1% of all pomace spirits globally, as standard barrel-aged Grappa is typically matured for only 18 months to 3 years.

"Grappa a Piena Gradazione" translates to "Full-Grade Grappa" or "Full-Strength Grappa"—what we refer to as "Natural Cask Strength." This indicates that zero water was added to the spirit after barrel maturation, preserving the maximum concentration of elegant notes and essential oils from the grape skins.

Color:

Rich amber with distinct reddish-pink and bronze highlights drawn from the Pinot Noir pigments.

Nose:

remarkably delicate for such a high-ABV spirit, offering notes of red berries (cherry, raspberry, cranberry), natural vanilla, subtle earthiness, and dried fruits.

Palate:

The nose translates beautifully to the palate. The French oak preserves the natural flavors of the grape spirit while the essential oils coat your palate with a silky, smooth texture. It concludes with a long-lasting finish, making it an extraordinary digestif.

Serving Suggestions:

Enjoy neat in a tulip glass or snifter as a nightcap, pair it with artisan cheeseboards, sip alongside fresh coffee, or use a generous nip to soak your apple cake—yum!
